Plant-Based vs. Vegan: A Tale of Kale, Morals, and a Lot of Legumes

Let’s clear something up before someone throws a tofu block at me: plant-based and vegan are not the same thing. I know, I know — both groups wouldn’t touch a cheeseburger with a ten-foot celery stalk, but the reasons why and how they eat can differ wildly. As a chef, I’ve cooked for both camps, and trust me — if you think it's just semantics, you've clearly never tried to swap out honey in a vegan’s smoothie.

So what’s the deal?

The Plant-Based Eater: The Health-Conscious Hipster
Plant-based eaters are typically in it for their own health. They’ve read the studies, watched the documentaries and decided that fruits, veggies, legumes, and whole grains are where it’s at. They might still wear leather shoes, order the occasional egg-white omelet when traveling, or cook meat for their dog without needing to sage the house afterward.

Plant-based diets vary a lot. Some people eat mostly plants, some go full herbivore, but most aren’t doing it because they’re concerned about chickens getting PTSD. It’s about cholesterol, inflammation, weight management, and yes — sometimes aesthetics. A glowing green smoothie looks damn good on Instagram.

The Vegan: The Ethical Purist
Vegans, on the other hand, are not just skipping the cheese for their arteries — they're doing it for the animals, the planet, and often, a deep sense of moral responsibility. For vegans, being vegan isn’t just a diet; it’s a lifestyle. No meat, no dairy, no eggs, no honey. No leather boots, no wool sweaters, no silk scarves. Some even avoid products filtered with animal by-products — yes, even certain wines and sugars are on the blacklist.

Veganism is a commitment. A passionate, frequently vocal commitment. You won’t just hear about what they eat, you’ll likely get a quick TED Talk on animal rights if you ask the wrong question at dinner.

But Aren’t They Both Just Eating Salad?
Sure, if you think "eating salad" means roasted eggplant with tahini drizzle, quinoa with charred corn and black beans, or a lentil curry that’ll melt your face off. Both groups can enjoy the same food — but again, it’s the why and what else that separate them.

A plant-based eater might eat a veggie burger and not care if it’s grilled on the same surface as meat. A vegan will ask you to clean that grill like it's about to be used in surgery.

So, Who’s “Better”?
Ah, the question everyone’s thinking but afraid to ask. The truth is — neither. Or both. Depends on your angle.

Want to lower your blood pressure, have more energy, and live longer? A plant-based diet might be your best bet.

Want to save the animals, tread lighter on the Earth, and fight factory farming? Go vegan.

Just don’t mix them up — one is a diet, the other is a lifestyle. It’s the difference between “I don’t eat bacon” and “I will flip this table if that honey gets anywhere near my vegan pancakes!”

Final Bite:
In the kitchen, I’ve learned to respect both. They’ve pushed chefs like me to be more creative, flavor-focused, and resourceful. That’s why I've created an 8-week rotating vegan meals menu. Bottom line, I never want you to get bored with our meals.

Personally, I consider myself a carnivore who simply loves his veggies. But as much as I hate to admit it, more often than not, half my veggies are gone before I even cut my Filet Mignon… so maybe, just maybe, I'm not as much of a carnivore as I think I am.
