We pull the meat from freshly roasted chickens (and eat all the wings,) then we add minced onion, celery, mayonnaise, a touch of dijon mustard, sea salt, and black pepper.

Love this Roasted Chicken Salad! Never use bread, just big scoop on salad greens. The best!
